Ingredients
 

  • 1 ½ tablespoons vegetable oil
  • 1 large sweet onion diced
  • 4 garlic cloves minced
  • 1 ¼ teaspoons dried oregano
  • ½ teaspoon ground cumin
  • 2 cans green chiles diced
  • 4 ½ cups rotisserie chicken shredded
  • 1 ¾ cups salsa verde divided
  • cup fresh cilantro chopped
  • 3 ½ cups shredded Monterey Jack cheese divided
  • kosher salt to taste
  • black pepper to taste
  • 9 flour tortillas warmed
  • cup sour cream for serving

Instructions
 

  • Preheat the oven to 375 °F. Grease a 9x13-inch baking dish with oil or nonstick spray.
  • Warm the oil in a large skillet over medium heat. Sauté the onion for 2-3 minutes until it turns translucent, then add the garlic, oregano, and cumin, cooking just until aromatic, roughly a minute. Take the skillet off the heat and mix in the green chiles.
  • Transfer the chile mixture to a large bowl along with the chicken, ⅓ cup of the salsa verde, and the cilantro. Fold in about half the cheese and season with salt and pepper.
  • Spoon a generous portion of the filling down the center of each tortilla, roll tightly, and arrange seam-side down in the prepared dish. Once all the tortillas are filled and rolled, pour the remaining salsa verde over the top and scatter the rest of the cheese evenly across.
  • Bake for 35-40 minutes, until the cheese is melted and bubbling.
  • Let the enchiladas rest a few minutes, then serve warm with a dollop of sour cream on top.

Notes

  • Warm the tortillas before rolling so they bend without cracking.
  • Take the filling off the heat before adding the green chiles to keep their flavor bright.
  • Rotisserie chicken saves time and adds built-in seasoning to the filling.
  • Pour the salsa verde evenly over the tortillas so none dry out at the edges.
  • Let the baked enchiladas rest a few minutes before serving so they hold together.
  • Assemble ahead and refrigerate up to a day, or freeze unbaked for up to two months.
