Ingredients
 

  • 7 oz farmer’s cheese or dry cottage cheese
  • 1 large egg
  • 4 tablespoons corn flour
  • 2 teaspoons granulated sugar

  • Place the farmer’s cheese and egg in a bowl and mash them well with a fork until smooth and well combined.

  • Add 3 tablespoons of the corn flour and the sugar to the cheese mixture, then mix everything together thoroughly.

  • Sprinkle the remaining corn flour on a work surface, then shape the cheese mixture into patties, coating both sides with flour. For even edges, you can place each patty under a glass and roll it a few times.

  • Fry the patties over medium heat in a skillet with a little oil. Cook each side for 5–7 minutes, until golden brown. Enjoy!

Notes

  • Use well-drained cottage cheese to avoid a runny batter that won't hold its shape.
  • Fine cornmeal gives a smoother coating than coarse cornmeal, though both work.
  • Do not raise the heat above medium, or the coating will burn before the center cooks through.
  • Leftovers keep in the refrigerator for up to 2 days in an airtight container.
  • Reheat in a skillet rather than a microwave to preserve the crisp exterior.
  • Serve with sour cream, honey, jam, or fresh berries for extra flavor.
