Ingredients
 

  • 1 ⅔ cups all-purpose flour
  • ¾ cup+3 tablespoons granulated sugar
  • 1 large egg
  • ½ cup milk
  • cup vegetable oil
  • 1 tablespoon unsweetened cocoa powder
  • 1 teaspoon white vinegar
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 pinch of salt
  • 1 teaspoon red food coloring
  • 2 tablespoons plain yogurt or sour cream
  • 10½ oz mascarpone cheese cold
  • 1 cup heavy whipping cream sweetened, cold
  • 1 teaspoon vanilla extract
  • cups crumbled Red Velvet cake cooled, from the layer above
  • ⅓ to scant ½ cup raspberry juice

Instructions
 

  • In a bowl, beat the egg with the sugar for a few minutes, until the mixture turns pale and slightly fluffy.
  • Add the milk, oil, yogurt, vanilla extract and red food coloring, then mix briefly to combine.
  • Add the flour, cocoa powder, salt and the baking soda dissolved in vinegar, then fold everything together just until combined — don't overmix.
  • Pour the batter into a baking pan lined with parchment paper and spread it into an even layer.
  • Bake in a preheated oven at 350°F (175°C) for 25–30 minutes, until a toothpick inserted in the center comes out clean.
  • Let the cake cool completely, then crumble it into pieces the right size for layering in the dessert cups.
  • In a bowl, combine the cold mascarpone, cold whipping cream and vanilla extract, then beat just until you get a firm, smooth cream — avoid overbeating.
  • Spoon a layer of cake crumbs into glasses or cups, drizzle with raspberry juice, then add a layer of mascarpone cream.
  • Keep alternating the layers until the glasses are full, finishing with a layer of cream on top.
  • Decorate to taste with cake crumbs, fresh raspberries or grated chocolate, then keep the dessert cups chilled until ready to serve.

Notes

  • Use a food-safe gel food coloring for the most vibrant red without thinning the batter.
  • Keep the mascarpone and heavy cream cold right up until you whip them for a firmer, more stable cream.
  • Let the cake layer cool completely before crumbling, or it will clump into a paste instead of loose crumbs.
  • Assemble the layers in clear glasses so the cake, cream and raspberry layers are visible.
  • Fresh raspberries or grated chocolate make a simple, elegant finishing touch.
  • Chill the assembled cups for at least 3–4 hours, or overnight, for the best texture and flavor.
