Ingredients
 

  • 3 cans white beans rinsed and drained
  • cups low-sodium chicken broth divided
  • 3 tablespoons extra-virgin olive oil
  • 1 medium-large yellow onion diced
  • 1-2 jalapeño peppers seeded and minced (adjust to taste)
  • 3 medium poblano peppers seeded and diced
  • 5 cloves garlic minced
  • tablespoons ground cumin
  • 1 teaspoon ground coriander
  • teaspoons ancho chile powder
  • salt to taste
  • 1 whole rotisserie chicken skin discarded and meat shredded (about 4½ cups)
  • 1 cup frozen corn kernels
  • 2 tablespoons fresh lime juice plus extra to taste
  • cup chopped fresh cilantro

Optional toppings:

  • sour cream
  • crushed tortilla chips
  • shredded cheddar or Pepper Jack
  • lime wedges

Instructions
 

  • Purée one can of the white beans together with 1 cup of the chicken broth in a blender or food processor until smooth, then set this mixture aside along with the remaining whole beans.
  • Warm the olive oil in a large Dutch oven over medium-high heat, then add the onion, jalapeño, and poblanos.
  • Sauté the vegetables for about 5 minutes, stirring often, until they've softened.
  • Stir in the garlic and cook for another minute, then add the cumin, coriander, and ancho chile powder, stirring constantly for about a minute so the spices release their aroma.
  • Pour in the rest of the broth along with the puréed bean mixture and a pinch of salt, bring everything to a boil, then lower the heat and let it simmer gently, uncovered, for roughly 20 minutes.
  • Fold in the shredded chicken, the reserved whole beans, corn, and lime juice, then let the pot come back to a light simmer.
  • Cook for about 5 more minutes until everything is warmed through, then taste and add more salt or lime juice if needed, finishing with the cilantro stirred in at the end.
  • Ladle the chili into bowls and serve warm, topped with sour cream, crushed tortilla chips, and a lime wedge on the side (keep in mind the broth looks thin at first but thickens naturally as it sits).

Notes

  • Blending one can of beans is the key step for creamy texture — don't skip it, and don't over-blend the whole beans that go in later.
  • Adjust jalapeño quantity based on your spice tolerance; removing seeds and membranes significantly reduces the heat.
  • The chili will thicken noticeably as it cools, so if reheating leftovers, add a splash of broth to loosen it back up.
  • For extra depth, roast the poblano peppers under a broiler for 5–7 minutes before dicing to add a subtle smoky flavor.
  • Add cilantro and lime juice only at the very end of cooking to preserve their fresh, bright flavor.
  • This recipe freezes well for up to 3 months, but hold off on adding toppings like sour cream and chips until after reheating.
